Supa crema de dovlecel / Zucchini cream soup


Ingrediente / ingredients:

- 3-4 dovlecei - 3-4 zucchini
- o ceapa - an onion
- 2 morcovi - 2 carrots
- un pastarnac - a parsnip
- putina telina - a little celery
- un cartof  - a potato
- 3 galbenusuri - 3 yolks
- 3 linguri de smantana - 3 tablespoons of sour cream
- crutoane  - croutons

Se pun legumele la fiert, se paseaza si se dilueaza cu supa in care au fiert legumele. Separat se amesteca galbenusurile cu smantana si se adauga cate putina supa. Tot amestecul se adauga in oala si se mai lasa la fiert 2-3 minute la foc mic.
Se serveste cu crutoane si putin parmezan.

Put the vegetables to boil, pass and dilute with the soup in which the vegetables were boiled. Separately mix the yolks with sour cream and add a little soup. All the mixture is added to the pot and boiled for 2-3 minutes at low heat.
Serve with croutons and a little parmesan cheese.

Placinta cu branza / Cheese pie



Ingrediente / ingredients:

- 12 oua - 12 eggs
- 7 linguri de faina - 7 tablespoons flour
- un praf de copt - baking powder
- 12 linguri de zahar - 12 tablespoons sugar
- 7 linguri de ulei - 7 tablespoons oil
- esenta de vanilie - vanilla essence
- 700 g branza dulce - 700 g cheese

Pentru inceput pregatim blatul: separam 7  oua, batem spuma tare albusurile impreuna cu 7 linguri de zahar. Adaugam galbenusurile, praful de copt, esenta de vanilie, faina si uleiul. Impartim compozitia in 2 . Turnam jumatate in tava si dam la cuptor pana prinde consistenta.

First prepare the cake:  separate 7 eggs, beat egg whites hard foam with 7 tablespoons of sugar. Add the egg yolks, baking powder, vanilla, flour and oil. Divide mixture into two. Pour into pan and give to baked untilconsistency.


Crema de branza se pregateste astfel: se mixeaza branza impreuna cu zaharul, 5 oua si esenta de vanilie. Turnam compozitia peste jumatatea de blat.

Cream cheese prepared as follows: mix cheese with sugar, 5 eggs and vanilla. Pour over the dough.


Turnam restul de compozitie si lasam la cuptor pana se rumeneste.

Pour remaining composition and leave in the oven until is golden brown.


Deasupra presaram zahar pudra.

Sprinkle powdered sugar on top.

Budinca de pui / Chicken Pudding



Ingrediente / ingredients:

- un piept de pui - Chicken breast
- 200 ml smantana pentru gatit - 200 ml cream for cooking
- 50 ml lapte - 50 ml of milk
- o lingura de faina - A tablespoon flour
- 500 g ciuperci proaspete - 500 g fresh mushrooms
- o legatura de patrunjel - A parsley
- 4 cartofi fierti - 4 boiled potatoes
- 200 g cascaval - 200 g cheese
- sare si piper dupa gust - Salt and pepper to taste

Pentru inceput taiem pieptul de pui in bucati mici si il calim putin.

For starters cut the chicken into small pieces and fry it a little.



Adaugam ciupercile feliate.

Add sliced mushrooms.



Dupa ce s-au rumenit ciupercile, adaugam o lingura de faina si amestecam continuu.

After the mushrooms have browned, add a tablespoon of flour and stir continuously.


Adaugam smantana si laptele si lasam sa se ingroase sosul putin.

Add cream and milk and let thicken the sauce slightly.


Turnam amestecul intr-o tava care intra la cuptor. Adaugam deasupra patrunjel tocat.

Pour mixture into a pan for oven. Add chopped parsley on top.


Adaugam cascaval ras.

Add grated cheese.


Adaugam cartofii fierti rasi pe razatoarea mica si deasupra iar cascaval. Bagam la cuptor pentru 20-25 minute.

Add grated  potatoes and grated cheese. Put in oven for 20-25 minutes.



Se serveste fierbinte!

Serve hot!

Yufka cu branza / Yufka with cheese


Ingrediente / ingredients:

- un pachet de foi triunghiulare Yufka - A package of sheets Yufka triangular 
- 300 g branza de oaie - 300 g sheep cheese
- 50 de grame cascaval - 50 grams cheese
- 120 ml lapte - 120 ml of milk
- 2 oua - 2 eggs
- o legatura de marar  - A bunch of dill
- 50 g chimen - 50 g cumin
- o lingura de mac - A tablespoon of poppy

Am gasit aceste foi Yufka si mi s-au parut destul de interesante. Sunt foi subtiri, turcesti din care se pot face tot felul de placinte. Erau si dreptunghiulare, dar am luat triunghiulare si reteta este cea de pe pachet.

I found these  Yufka sheets and I thought were quite interesting. Are thinTurkish sheets  that can be use to make all kinds of pies. There were rectangular and triangular ,  I made  the recipe on the package.



Punem intr-un castron branza, 60 ml lapte, un ou, chimenul si mararul tocat marunt.

We put cheese in a bowl, add 60 ml milk, egg, cumin and chopped dill.



Separat amestecam 60 ml lapte si un ou. Cu acest amestec ungem "tigaretele".
Punem 1-2 lingurite din compozitie la baza triunghiului si rulam. Ungem cu putina apa rece varful si lipim.

Separately mix 60 ml milk and egg. With this mixture Brush "cigarettes".
Put 1-2 teaspoons of composition at the base of the triangle and roll. Brush top with some cold water and stick.



Le ungem cu compozitia de ou si lapte si deasupra presaram mac. Le dam la cuptor pentru 35 minute.

Brush them with egg and milk composition and sprinkle over poppy. We give them in the oven for 35 minutes.

Pina Colada Cheesecake



Ingrediente / ingredients:

- 15 biscuiti digestivi  - 15 digestive biscuits
 - 100 g unt topit  - 100 g butter
 - o cutie de ananas   - A box of pineapple
 - 400 ml frisca - 400 ml cream
 - 500 g mascarpone - 500g mascarpone
 - 50 ml rom  - 50 ml rum
 - 2-3 linguri zahar pentru frisca - eu folosesc o frisca neindulcita  - 2-3 tablespoons sugar to whipped cream - I use an unsweetened whipped cream
 - 20 g gelatina - 20 g gelatin

Pentru inceput maruntim biscuitii, adaugam untul topit si turnam toata compozitia intr-o forma cu pereti detasabili.

For starters Crumblethe  biscuits, add the melted butter and pour the entire mixture into a form with removable walls.


Mixam frisca cu zaharul, adaugam mascarpone, ananasul facut pasta si romul. Daca la masa sunt si copii, putem adauga 2 lingurite de esenta de rom.  In sucul de la compotul de ananas hidratam gelatina, apoi o punem putin la foc ca sa se dizolve complet. Adaugam gelatina peste crema.

Mix cream and sugar, add mascarpone, pineapple pasta and rum  . If serve our children, we can add 2 teaspoons of rum essence. In the juice of pineapple compote hydrated gelatin, then put a little to heat to completely dissolve. Add gelatin over cream.


Adaugam compozitia peste blatul de biscuiti.

Add composition over  crackers.


Acoperim cu folie alimentara si lasam la frigider minim 4 ore. Putem decora cu frisca si bucati de ananas.

Cover with foil and leave  in the refrigerator at least 4 hours. We decorate with whipped cream and pineapple chunks.

Tiramisu



Ingrediente / ingredients:

- 400 g mascarpone - 400g mascarpone
- 400 ml frisca - 400 ml cream
- 50 ml amaretto - 50ml amaretto
- piscoturi - ladyfingers
- 3-4 linguri zahar - 3-4 tablespoons sugar
- 400 ml cafea indulcita - 400 ml sweetened coffee 


Batem frisca cu zaharul. Daca este deja indulcita nu mai adaugam zahar. Adaugam mascapone si 25 ml amaretto.

Beat the cream with the sugar. If it is already sweetened do not add sugar. Add mascapone and  25 ml amaretto.




Pregatim vasul in care montam prajitura. Adaugam putina crema pe fundul vasului , un rand de piscoturi inmuiate in cafea (in care punem restul de amaretto) iar un strat generos de crema si continuam pana terminam cu crema.

Prepare the dish in which assemble the cake. Add some cream on the bottom, a row of ladyfingers soaked in coffee ( put the rest of amaretto in coffee) and a generous layer of cream and continue until finished with cream.


In reteta originala se pun si galbenusuri crude, dar daca avem si copii la masa, putem sa renuntam la galbenusuri.
Pudram cu cacao inainte de servire pentru a nu se umezi la frigider.
Prajitura trebuie sa stea la rece minim 4 ore inainte de servire.

In the original recipe we put yolks , but if we have children at the table, we can give up the yolks.
Put cocoa on top before serving.
The cake must stay at least 4 hours before serving.

Bruschete cu ton / Tuna Bruschetta




Ingrediente / ingredients:

- o bagheta - baguette
- o conserva de ton file - tuna fillets
- unt - butter

Taiem bagheta felii si o bagam 3-4 minute la cuptor pana se rumeneste.


Cut baguette in slices and stuffing in the oven for 3-4 minutes until golden brown.



Ungem feliile calde cu unt si adaugam ton.

Brush the warm slices with butter and add  tuna.


Putem adauga si cativa stropi de zeama de lamaie.

We can add a few drops of lemon juice.

Tort Raffaello / Raffaello cake



Ingrediente / ingredients:

- un blat de tort - A  cake
- 500 g mascarpone - 500g mascarpone
- 400 ml frisca - 400 ml cream
- 6-8 linguri nuca de cocos - 6-8 tablespoons coconut
- 400 g ciocolata alba - 400 g white chocolate
- o foaie de napolitana  - A sheet of wafer
- cateva migdale - A few almonds
- o esenta de migdale - An almond extract
- 3 linguri de zahar - 3 tablespoons sugar

Batem frisca si o amestecam cu mascarpone. Daca frisca este neindulcita, adaugam 2-3 linguri de zahar in frisca,

Beat the cream and mix with mascarpone . If the cream is unsweetened , add 2-3 tablespoons sugar cream,


Topim ciocolata la bain marie si o adaugam in crema.

Melt the chocolate in a bain marie and add in the cream.


Adaugam migdalele tocate grosier, foaia de napolitana maruntita si  nuca de cocos,  dar pastram 2 linguri pentru ornat.

Add chopped almonds wafer sheet and shredded coconut , but keep 2 tablespoons for garnish.


Facem un sirop din zahar, apa si 3-4 picaturi de esenta de migdale. Insiropam blatul de tort si adaugam crema.

Make a syrup from sugar, water and 3-4 drops of almond extract. Moist cake dough and add the cream.


Imbracam tortul in crema, pe deasupra adaugam nuca de cocos si putem adauga si cateva bomboane Raffaello. Il lasam la rece minim 6 ore.

Dress the Cake  in cream, add coconut over and we can add some  Raffaello candy. Leave it to cool at least 6 hours.

Frittata cu bacon si masline / Frittata with bacon and olives



Ingrediente / ingredients:

- 4 oua - 4 eggs
- 2 linguri smantana - 2 tablespoons sour cream
- bacon - bacon
- masline - olive
- cascaval - cheese


Punem ingredientele intr-un castron cu sare si piper.

Put ingredients in a bowl with salt and pepper.


Amestecam totul bine si turnam intr-o tava care intra la cuptor.

Mix everything well and pour into a pan that come in the oven.


Dupa 2 minute, scoatem frittata de la cuptor si adaugam restul ingredientelor deasupra. Daca le-am fi pus de la inceput, s-ar fi lasat toate pe fundul tavii.


After 2 minutes, remove the frittata from the oven and add the remaining ingredients on top. If we would have made from the beginning, would  left all the bottom tray.


Punem cascavalul ras deasupra si mai lasam la cuptor pana se topeste.

Put grated cheese on top and let the oven until melted.

Cotlet de porc in sos de vin si smantana / Pork chop in wine sauce and cream



Ingrediente / ingredients:

- cotlet de porc - pork chop
- 200 ml vin alb - 200ml white wine
- 200 ml smantana pentru gatit - 200 ml cream for cooking
- 300 g ciuperci champignon - 300 g mushrooms
- 4 linguri parmezan ras - 4 tablespoons grated Parmesan cheese
- o capatana de usturoi - A garlic
- sare si piper dupa gust - Salt and pepper to taste
- 2 lingurite de unt - 2 tablespoons butter

Intr-o tigaie punem untul si inabusim cotletele de porc .

In a pan put butter and braise pork chops.


Mutam carnea intr-o tava iar in sosul ramas punem usturoiul, sare si piper dupa gust si vinul. Lasam sa fiarba 2-3 minute.

Move the meat in a pan and put garlic in remaining sauce, salt, pepper and wine. Let it simmer for 2-3 minutes.


Turnam sosul format peste carne si punem la cuptor pentru 25-30 minute la foc mic.

Pour sauce over meat  and put in the oven for 25-30 minutes on low heat.


Separat sotam ciupercile intr-o lingurita de unt.

Separately braised mushrooms in a teaspoon of butter.


Turnam smantana si parmezanul si lasam sa fiarba sosul 3-4 minute.

Pour over mushroom cream and parmesan  and let it simmer for 3-4 minutes.


Carnea este gata cand scade tot sosul din tava.

The meat is ready when is no longer sauce in the pan.


Se serveste fierbinte cu garnitura preferata, eu am facut cartofi aurii si am trunam sosul de smantana peste carne.

Serve hot with your favorite side dish, I made and  golden potatoes and pour cream sauce over the meat.

Ciuperci la tigaie / Fried mushrooms






Ingrediente / ingredients:

- 1 kg ciuperci brune - 1 kg brown mushrooms
- o lingurita de unt - A teaspoon of butter
- 4-5 catei de usturoi - 4-5 cloves garlic
- o legatura de ceapa verde - A bunch of spring onions
- sare si piper dupa gust - Salt and pepper to taste
- cimbru - thyme
- patrunjel - parsley

Feliem ciupercile si le calim in unt.

Slice the mushrooms and fry them in butter.


Adaugam usturoiul si ceapa.

Add garlic and onion.


La final adaugam sare si piper dupa gust si garnisim cu patrunjel proaspat.

Finally add salt and pepper to taste and garnish with fresh parsley.
